5 eggs
Sausage meat
Oil for frying

Original 1805 / 1807 Recipe:
Scotch Eggs.
Boil hard five pullets eggs, and without removing the white, cover completely with a fine relishing forcemeat, in which, let scraped ham, or chopped anchovy bear a due proportion.
Fry of a beautiful yellow brown, and serve with a good gravy in the dish.


Step 1
In a medium saucepan, cover eggs with water and boil for 10 minutes for a hard boil. Remove the eggs from the water and place in ice water to cool.

Step 2
Remove egg shells.

Step 3
Cover eggs in sausage meat.

Step 4
Fry in shallow ( 1/2" - 1" deep) 325'F (162'C) oil.
